After nearly a year’s hiatus, I’ve gone back to following Slimming World. When I started working from home - nearly a year ago - I thought I’d be better placed than ever to eat properly and keep things under control. And initially that was working, I lost half a stone...then gradually it crept back on...and a bit more....😱 All my baking this last few months almost certainly hasn’t helped!
A few years ago I lost weight quite successfully with Slimming World; to be fair its current name is a bit of a misnomer - as much as anything it’s a healthy eating framework rather than a diet. It just teaches you how to balance eating good food with a few treats. There’s certainly very few times you’re actually, genuinely hungry. The problem just lies when a ‘cheat meal’ turns into a ‘cheat day’, then cheat days turn into cheat weeks...
Anyway I’m back on it. For our meals this week I looked back through the many SW books and recipes
torn out of their magazines that I kept. One that caught me eye was Beef and Bean Hotpot - and one of the key things that convinced me to do it was its simplicity. Although I’m at home I’m still working full time so I still don’t want to spend ages prepping stuff and using loads of different ingredients.
This recipe would actually be good if you were on a budget as it uses 500g cubed stewing steak (a cheaper cut), plus a tablespoon of seasoned plain flour, a couple of onions and carrots, 300ml beef stock, 2 tsp Worcester Sauce, a large tin of baked beans and a large potato.
Chop the onions and carrots and put in a large casserole dish with everything else and mix. Top with thin slices of potato, cover and bake at 180° for 90 minutes then remove the covering and put under a hot grill for 10 minutes to crisp up the potatoes.
And that’s it! Easy peasy. Five minutes to prep at teatime then it just does it’s stuff while I’m working for the rest of the afternoon. Rabbit food? Couldn’t be any further away!
