Back to basics (recipe: chocolate cookies)

It only really dawned on me today that since Christmas - a full two weeks -  I’ve barely baked at all; only a couple of sourdough loaves a week so we can still have toast for breakfast! I had a bit of a baking frenzy in the weeks leading up to the festivities and whilst I enjoy it, it’s nice to have a break. 

I had 10 days off over Christmas and New Year and felt completely unremorseful about doing very little. Not that there was a lot to do with Covid restrictions putting us in tier 4! Just nice to have time for some lie-ins and to catch up on reading and TV. 

Idly channel hopping one day I came across a repeat of a
Nigel Slater programme. Mr S can do little wrong in my eyes - his way of doing things comes across as so much more relaxed so and accessible than a lot of other chefs. It’s like watching a friend demonstrate making something. Anyway in this programme he did his favourite chocolate cookies - very slightly crispy on the outside and soft on the inside. I’ve been enjoying a biscuit with my post-lunch coffee recently so gave them a go in my lunch break today. Didn’t have the hazelnuts he mentions but threw in some chopped almonds (although I’ve since been thinking macadamias would be pretty awesome in these!)
